Salmon with Roasted Parmesan Encrusted Fresh Green Beans

Salmon:

Salmon is one of those fish dishes that I personally have avoided over the years because I thought the flavor was too strong, but Kelley absolutely loves it. That said, this recipe is absolutely delicious and has really made me change my mind about salmon and I think you will love it too. What am I looking for in Salmon?
I am looking for a piece of salmon that breaks away gently with edge of my fork after it is cooked. I want the fish to be moist and delicate, but not falling apart and over cooked. I do not want a fishy smell or taste. I love to taste a little seasoning that enhances the flavor of the fish, but doesn’t over take it. I want salmon goodness!

  • Purchase or cut salmon into portion size pieces
  • Check for and remove any pin bones
  • Coat salmon generously grape seed oil or olive oil.
  • Sprinkle the fish generously with “It’s My Rub!” Smooth Blend
  • Prepare grill for indirect grilling and heat to 375 degrees. Click HERE for instructions on how to setup grills for indirect cooking.
  • Add salmon to hot preheated grill
  • Cook until internal temp reaches 145 degrees. About 10 to 12 minutes.

Roasted Parmesan Encrusted Fresh Green Beans

Makes 4 to 6 servin

Ingredients:

  • 1 pound              Fresh green beans, wash and trim
  • 3 tablespoons    Grape seed oil or olive oil
  • ½ cup                 Parmesan cheese, grated
  • 1 teaspoon         Ground pepper
  • 1 teaspoon         “It’s My Rub!” Power Blend

Directions:

  • Preheat the oven to 375° or setup grill for indirect cooking.
  • Line a baking sheet with parchment paper.
  • In a large bowl, toss the green beans with the olive oil.
  • Add the Parmesan, pepper and “It’s My Rub!” Power Blend and toss until well to coat.
  • Spread the green beans onto the baking sheet and bake until crisp, 10 to 15 minutes
