Super Easy and Delicious Pinto Beans

Super Easy and Delicious Pinto Beans

2 Tablespoons Lard

½ Small Onion

Cook onions in lard until translucent, then add:

2 Teaspoons Underwood’s “It’s My Rub!” Power Blend

2 Teaspoons Knorr Chicken/Tomato Stock Powder (http://www.amazon.com/Knorr-Tomato-Bouillon-Chicken-Flavor/dp/B000VXJFIY)

½ Teaspoon Black Pepper

Heat in pan for 30 seconds, then add:

1 Can Bush’s Seasoned Pinto Beans, drained and rinsed

¾-1 Cup of Water

Simmer for one hour over low heat, stirring often to avoid scorching, or, better yet, use a simmer mat:  (http://www.amazon.com/Simmer-Mat-5200-Diffuser/dp/B000W24RW8/ref=sr_1_1?ie=UTF8&qid=1395099826&sr=8-1&keywords=simmer+mat)

 

These pinto beans are so tender and full of flavor, but yet so easy!  I love beans of any kind and was wanting to make some pinto beans to go with our chicken tomatillo tamales.  When I make beans, I like to make a lot!  Tonight, all I had on hand was one small can or a gallon sized can.  Nothing in between.  So, I went with the small can.  These were so tasty.  The broth had a nice, delicate smoky flavor from the Power Blend.  Bruce isn’t as “into” beans as I am, but he absolutely loved these beans…..so much so, I sacrificed the leftovers and let him take them to the office for lunch the next day!  A true act of LOVE!!  So there you have it, Super Easy and Delicious Pinto Beans!
