For the perfect Mopping Sauce, mix together the following:
6 ounces Pineapple Juice (one small can is 6 ounces)
6 ounces Apple Cider Vinegar
9 ounces Water
1/2 Cup “It’s My Rub!” Smooth Blend
Directions:
Heat the mixture in a small boiler on low heat until well blended. Do not boil.
Use as a mopping or brushing sauce on pork, ribs or pour over pulled/chopped pork for added flavor.
What is Mopping Sauce?
Mopping sauce is a sauce that is mopped or brushed on meat or vegetables as it is cooking. The word “mop” comes from the fact that it is a small mop that is used to “mop” the sauce onto the meat. See the picture attached.
Mopping the meat as it is cooking adds flavor and moisture to the meat. The mopping sauce in the recipe adds sweetness from the apple juice, tanginess from the pineapple juice, and savoriness from the rub while at the same time adding moisture. This sauce is also just a good sauce, especially for pork. You will find this recipe in our pork ribs recipe and in our pulled pork recipe. If you wnat the ultimate pork, give this a try. You just need to make this and taste it. It is crazy good!
