Double Thick Grilled Rib Pork Chops

Ingredients:

  • Double-thick bone in pork rib chop (see “Where to find these chops” below)
  • Apple Juice Brine – Click here for recipe
  • 1 tablespoon Olive oil
  • Underwood’s “It’s My Rub!” Power Blend or Smooth Blend

Directions:

Mix the brine as described on the post “Brining Recipe – All Purpose“.  Add add in the pork chops and brine overnight or at least 6 hours.

Pork Chops - Double Thick Rib ChopsRemove the chops from the brine and pat dry with paper towels.  Coat the chops with olive oil and apply “It’s My Rub!” to both sides.  Allow the chops to come up to room temperature before grilling (1 to 2 hours).

Preheat grill to 600-650 degrees direct heat.   Use a cast iron grate if you have one. Place the chops on the grill and let cook about 1 1/2 minutes then rotate 1/4 turn on same side.  Cook for another 1 1/2 minutes and then flip. Cook for another 1 1/2 minutes then rotate.  Take the internal temp.  I usually take my pork chops off around 133 Pork Chops - Double Thick Rib Chopsdegrees and let them rest for at least 10 minutes before serving.  The chops will continue to cook during the rest time and will be around 145 degrees at serving.  Pork can safely be served at lower temperatures than thought several years ago.  This is an acceptable temp.  The chops will be succulent and moist, and have a slight pink color in the center.

Pork Chops - Double Thick Rib ChopsWe had eaten wonderfully cooked double-cut bone in rib chops at a local restaurant several years back and were determined to purchase some of these chops to grill for ourselves.  However, when going to grocery stores and even local butchers, we found them impossible to find. We were at Costco in November and saw a “rack of pork” and realized, “there are the chops that we have been looking for!”  We bought the rack and cut it into chops.  These make the best pork chops ever!  So, if you cannot find the “chops”, ask for or order a “rack of pork” and have it cut in to double-thick pork chops.
