Award Winning Bacon Wrapped Pineapple Gems
Award Winning Bacon Wrapped Pineapple Gems are a crowd favorite! They are bacon wrapped dried chili pineapple chunks covered with a jalapeño jelly glaze and “It’s My Rub!” Smooth Blend. This recipe won the 2014 Kentucky State BBQ Festival’s One Bite Challenge by Michael Tipton of Lexington, KY.
This recipe has been a crowd favorite at Big Green Egg festivals. We initially tried this recipe using fresh pineapple, but found that we could not prep ahead for events because the acid in the pineapple would make the bacon fall apart (that said, try this with fresh pineapple if you are cooking them right away). Finding that the pineapple was breaking down, we tried dried pineapple and the magic combination was found. We have been told by some folks that this is the best single bite that that they have ever tasted. Try this bite…we think you will love it!
Chile Rubbed Dried Pineapple Chunks (found in produce section of HEB or can be ordered at www.eatnuts.com)
Thin Sliced Bacon, cut slices in thirds
Jalapeno Jelly (we use Tabasco green jelly)
“It’s My Rub”, Smooth Blend
Prepare BGE for indirect cooking at 350 degrees.
Wrap two chunks of pineapple with a third of a slice of bacon. No need to secure with a toothpick.
Place on rack or grate with drip pan underneath.
Cook about 30 minutes.
When bacon is almost done, glaze with melted jalapeno jelly. Sprinkle with “It’s My Rub” Smooth Blend. Cook an additional 10 minutes.
When bacon is done and glaze is set….enjoy!
