Southern Shrimp Scampi

Southern Shrimp Scampi- as served at the 2015 Athens Eggfest

This is a simple and absolutely delicious recipe for shrimp.  Prepped and cooked in less than 30 minutes!

 

 

Ingredients:

  • 1 lb Shrimp – Shelled and deveined raw shrimp
  • 1 stick Butter – melted in sheet pan
  • 2 Lemons – sliced into 1/8″ slices
  • Underwood’s “It’s My Rub!” Power Blend
  • Chives – diced for garnish

Directions:

Preheat oven to 400 degrees.
Melt one stick of butter in a sheet pan in the oven.
Remove pan from oven and line the sheet pan with sliced lemons.  The butter should remain in the pan.
Place the shrimp in the pan on top of the lemon slices.
Generously cSouthern Shrimp Scampiover the shrimp with Underwood’s “It’s My Rub!” Power Blend.
Bake in the oven for 10-12 minutes until done.

Serve shrimp in a bowl or plate and drizzle the butter sauce over the shrimp. Add chives for extra flavor and garnish.  The shrimp and sauce are great served over rice or with bread, using the butter as a dipping sauce.  This is one of of the best shrimp dishes that I have ever tasted.  It has a hint of smokiness that will remind you of New Orleans BBQ shrimp and with flavors of shrimp scampi.
